1 large pumpkin
1 1/2 lb. ground beef
1 medium onion, chopped
1/4 cup soy sauce
2 tbsp. brown sugar
1 (4 oz) can sliced mushrooms, drained
1 (10 3/4 oz) can cream of chicken soup
2 cups cooked rice
chow mein noodles

Cut top from pumpkin and clean out seeds and stringy pulp. You can draw a face on the pumpkin with a permanent marker if desired, or just leave plain.

In a large skillet, brown the onion and meat together. Add soy sauce, brown sugar, mushrooms, and soup. Simmer 10 minutes. Mix in rice and then pour mixture into the pumpkin. Place filled pumpkin on a cookie sheet or baking pan and bake for 1 hour at 350 degrees.

When serving, be sure to scoop out the pumpkin and serve it as a vegetable along with the meat dish. A little butter and cinnamon/sugar mixture is good on the pumpkin. Sprinkle the meat dish with chow mein noodles and a little ground cinnamon, if desired.


Don't throw out the Seeds - Turn them into a snack!

Spread 1 cup rinsed pumpkin seeds on an oiled baking sheet and dry in a 300 degree oven for 30 minutes. Take out of oven and toss with 2 tbsp. melted butter and seasonings. For sweet: 1 1/2 tbsp. brown sugar, 1/2 tsp. ground cinnamon, and a pinch of nutmeg. For savory: 1/2 tsp. coarse salt, 1 1/2 tbsp. grated Parmesan cheese, and a pinch of black pepper. Roast at 375 degrees for 7 minutes and you're done!
