2 lbs. Large Shrimp 21-25's
1 Lemon, thinly sliced
1/2 Red Onion, thinly sliced
1 Cup Pitted Kalamata Olives
2 Table Chopped Roasted Red Peppers
1/4 Cup Canola Oil
2 Cloves Garlic, Minced
1 Tbles. Dry Mustard
1 Tbles. Salt
1/2 Cup Fresh Lemon Juice
1 Tbles Red Wine Vinegar

Shell and devein shrimp. Boil in salted water until cooked, appx. 3 minutes. Drain and rinse in cold water and set aside. In a bowl, combine lemon slices, onion, olives and roasted red peppers. Combine oil, garlic, dry mustard, salt, lemon juice, wine vinegar. Add to bowl with lemon mixture. Marinate no longer than three hours. Arrange shrimp on serving dish and pour marinade over. Chill. Sprinkle with parsley and serve with toothpicks or on long skewers.
