2 packages (10 oz each) frozen chopped spinach, thawed, drained and liquid squeezed out
1 container (16 oz.) sour cream
1 cup of mayonnaise
1 package Knorr Vegetable recipe mix
1 can (8 oz.) water chestnuts, drained and chopped
1 bunch of scallions, finely chopped
1 red or orange bell pepper, seeded and chopped into small pieces
French Bread (1 large or 2 small rounds and 1 loaf)

Directions:
Directions:
Mix all ingredients (except French bread) well. Note: spinach will have a tendency to clump. Chill 2 hours or overnight.
Cut round French bread like a bowl. Cut top from bowl and extra loaf of bread into small bite size pieces. Spoon dip into the bread "bowl" place on platter with pieces of French bread around it for dipping.

We use red bell pepper for Christmas and Fourth of July and orange bell pepper for Thanksgiving. We also like using the small rounds of French bread, it fits better on the platter with room for the bread pieces around it.
