1 tbsp olive or canola oil
4 5- to 6 oz. bone in pork chops
Salt, Black Pepper
1 large sweet onion, cut in half then into thin slices
1 can (12 oz.) root beer (I use diet root beer to reduce the amount of sugar in the recipe)
3 tsp Dijon mustard
1 tbsp. brown sugar

Heat the oil in a large skillet (I use a deep dish electric skillet) over medium-high heat. Season the chops with salt and pepper to taste. Cook chops 2-3 minutes on each side to brown. Remove chops from pan, set aside on plate. Add the onion to the pan, cook over low heat until onion is soft (about 15 minutes). Stir root beer, mustard and brown sugar into onions. Increase heat and bring mixture to a boil. Reduce heat to medium, return chops to pan with the onion mixture. Cover and simmer until chops are cooked through (about 40 minutes) turning several times during cooking. Remove chops from pan. Increase heat to high and reduce liquid in the onion mixture by half (about 5-6 minutes). Place each chop on serving plate and spoon onion mixture on top of each chop.
