3 cups sugar
3 1/2 cups flour
1/2 teaspoon baking powder
2 teaspoons baking soda
1 teaspoon vanilla
2 eggs, beaten
1 teaspoon salt
1 teaspoon pumpkin pie spice
1 cup water
1 cup peanut oil
1 cup chopped walnuts
1 cup canned pumpkin

Directions:

Mix dry ingredients in a large bowl. Add remaining ingredients. Fold well. Pour into 2 greased and floured loaf pans. Bake 1 hour at 350 degrees. (check after 50 minutes) Toothpick should come out clean.
