1/4 cup olive oil
1 tablespoon fresh or dried rosemary, minced
2 cloves garlic, crushed
1 teaspoon salt
1 teaspoon freshly ground black pepper

2 skinless and boneless chicken breasts, cut lengthwise into 1-inch strips
4 cloves garlic, minced
1 (4 ounce) jar roasted red bell peppers drained and cut lengthwise into thin strips
1/4 cup dry white wine (or your preferred white wine of choice)
4 tablespoons balsamic vinegar
Salt and pepper to taste

1. In a glass or stainless steel bowl, mix together all the ingredients for the marinade. Add the chicken breast slices and toss gently so they are completely coated with the marinade. Cover the bowl with plastic wrap and place in the refrigerator to marinate for at least 2 hours and up to 12 hours.
2. Heat a medium frying pan over high heat and add 2 tablespoons of the marinade, spreading it so that it evenly coats the bottom of the pan. When the marinade just starts smoking, add the chicken breasts, garlic, and peppers and cook, stirring often, until the chicken is brown and just cooked through, 3 to 4 minutes. Add the wine and balsamic vinegar and stir until all the chicken is coated. Cook until the liquid is reduced by half, about 90 seconds. Season with salt and pepper and serve immediately.

Note 1: This is one of my favorite meals to cook for when company is coming over. It is easily doubled and tripled to allow for guests.
Note 2: Recommend serving with herb-roasted potatoes. I submitted a recipe - see "Herb-Roasted New Potatoes."
Note 3: DON'T go out and by the dry white wine, unless you don't drink and don't have any wine in the house. Whatever white wine you enjoy partaking in will work just fine for this recipe. :o)
