2 C warm H20
1/4 t sugar
2 T yeast
3 T sugar
1 T salt
5 3/4 c unbleached flour (or type of your choice. If whole wheat, split with unbleached or it will be too heavy.

Mix 1/4 t sugar, yeast and H20 in small bowl until let rest until bubbly. Mix dry ingredients in food processor and pour in yeast mixture. Mix only until it pulls away from the side of the bowl. Add more flour if necessary. Let rise until double. Knead, divide into 12 equal parts, form bagels and rest them for 20 to 30 minutes. Meanwhile bring large pot of H20 to boil, add 1 T sugar and add bagels a few at a time, turning constantly. Don't boil over 1 minute, preferably less. Blot off excess H20 on paper towels. Put on greased cookie sheet with corn meal sprinkles, bake at 400 for 20 minutes or less. Watch!

Might take a time or two to get the hang of it. Then you can play around with seeds or other additions for variety. The Hassen Family has been a big part of the Paulson family for many years. Their kids were all "best friends" while growing up in Medford, Oregon and John and Bill "simply do not act their age" whenever they see each other..how wonderful a friendship is that.
