1 lb. dates cut up
1 cup sugar
1 cup chopped nuts
1 cup flour
1 tsp. baking soda
1/2 tsp. salt
2 tsp. vanilla
4 stiff egg whites
2 bananas
1 cut orange
1/2 can chunky pineapple
maraschino cherries
juice from maraschino cherries
Directions:
Directions:
In a large bowl mix dates, sugar, nuts, flour, baking powder, salt, vanilla and egg whites. Bake in a 9X13 pan at 350 º for 30 minutes. Let cake cool at least 1 hour. Take half the cake, break into pieces and place on platter. Arrange in a circle. Add a layer of 2 sliced bananas, half cut up orange and half of the chunky pineapple. Add 1/4 of cake pieces. Repeat layering of fruit. Add remainder of cake pieces. Drizzle maraschino cherries juice until cake is moist to touch. Press gently to form half circle. Cover with whipping cream prior to serving. Decorate with nuts and maraschino cherries
