6 large potatoes, peeled
1 medium onion, chopped
1/2 C. finely chopped celery
2 T butter
3 slices bread, cubed
1/2 C milk
2 tsp salt
pepper to taste
1 tsp poultry seasoning
chopped parsley to taste
1 egg, beaten
1 C milk

Directions:
Directions:
Boil potatoes in water in saucepan until tender. Drain and mash. Saute onion and celery in butter in skillet until browned. Add to mashed potatoes with bread cubes, 1/2 C milk, salt, pepper, poultry seasoning and parsley; mix well. Beat in egg and remaining 1 C milk until mixture is smooth. Pour into greased 9 x `3" baking dish. Bake at 350º or until browned.
