2 pkgs. (6 oz. ea.) fresh baby spinach
1 salmon filet (1 to 1 1/2lbs.)
1 tsp. olive oil
3 tbsp. honey
3 tbsp. dijon mustard
1/4 c. corn flakes
2 tbsp. sliced almonds
2 tbsp. chopped pecans
1/4 c. fat-free mayonnaise (you can use regular mayo)
Hot cooked couscous, optional

Directions:

ŠPlace spinach in a 13 x 9in. baking dish coated with cooking spray. Drizzle olive oil over spinach. Place salmon on top of spinach.

Combine honey and mustard. Remove 2tbsp. mixture and brush over salmon. Place cornflakes, almonds and pecans in a food processor; cover and process until ground. Press mixture onto salmon. Stir mayonnaise into remaining honey mixture and refrigerate until serving.

Bake, uncovered at 450 degrees for 18 to 22 minutes or until fish flakes easily. Drizzle with reserved sauce. Serve with couscous if desired.
