1/2 C. softened butter
1 3/4 C. sugar
1 C. sifted flour (I like cake flour)
1/2 tsp. salt
1 tsp. baking powder
1/4 C. milk
2 egg whites (beaten stiff)
4 C. diced rhubarb

Directions:
Directions:
Cream butter and add 1/2 of the sugar. Add dry ingredients to creamed mixture alternately with milk. Fold in egg whites. Place rhubarb mixed with remaining sugar in the bottom of 8x8 square baking dish. Pour batter over fruit. Bake at 350º for 30-40 minutes (top will be crusty brown).
