turkey breast (can substitute chicken breasts)
1/2 cup fresh basil leaves
1/2 cup chopped scallions
olive oil
juice from 1 lemon
salt & pepper

Directions:
Directions:
In a large bowl, mix 1/2 cup each of chopped scallions and basil leaves. Add the juice of 1 lemon and salt & pepper. Mix and rub onto chicken or turkey breast and place in a baking dish well oiled with olive oil. Dribble a little olive oil over the the top. Roast uncovered at 350º for at least 30 minutes (depending on the size of the meat). Garnish with more basil leaves and lemon slices.
