1 cup warm water (110º-115º)
2 Tbsp. oil
1 tsp. sugar
1/2 tsp. salt
3 1/2 cups flour
1 Tbsp. dry yeast

GARLIC BUTTER:
2 Tbsp. oil
2 Tbsp. butter
4 garlic cloves, minces
1/2 tsp. salt
Melt over low heat for 5 minutes.

Combine first 4 ingredients in a large bowl. Add flour and dry yeast all at once and stir. Knead dough for 8-10 min, adding more flour if necessary to make a smooth, elastic dough. Cover and set dough in a warm place to rise for about 30 minutes. Punch down dough and roll out on a floured surface into a 12 x 12 rectangle. Using a pizza cutter, cut dough into 12 strips, each one being 1" wide. Cut strips in half (24 5 x 1 inch strips). Tie each strip into a knot. Place on greased baking sheet. Cover and let rise until nearly doubled in size (20-30 min). Uncover knots and brush lightly with garlic butter, trying to get the bits of minced garlic on the rolls. Bake at 375º for 15-20 minutes.
