2-3 large green tomatoes
3/4 c. cornmeal
1/4 c. flour
(or just use a jiffy cornbread mix in place of those)
1 tsp. sugar
salt and pepper
2-3 Tbsp Oil

Directions:
Directions:
Slice Tomatoes into 1/4 inch slices. Mix cornmeal, flour, sugar, salt and pepper into a dish. Pour oil in a skillet (cast iron is best) and heat til oil is almost smoking. Dip both sides of tomato slices into the cornmeal mix to coat well, then carefully place in hot oil. Brown both sides and then drain on paper towels.

Mom made these when I was younger and I wasn't excited about them. Then I tasted them, and the tart of the green tomatoes and the crisp of the light batter - Mmm! I can see why they named a book and movie about them!!
