2 lbs. small early red potatoes
1 small onion, chopped
4 Tbsp. REAL butter
4 Tbsp. flour
1 tsp. salt
1/2 tsp. pepper
2 1/2 c. milk, half and half, or combination
1/2 c. water the potatoes are boiled in
4 c. fresh peas, or TWO 10 oz. bags frozen peas

In a med-lrg saucepan, cook scrubbed unpeeled red potatoes in boiling salted water for 15-20 minutes or until tender. Drain all but 1/2 c. water - set that aside. In the same saucepan saute the onions in the butter. Blend in flour, salt and pepper. Stir in milk and remaining potato water and heat until sauce thickens, stirring constantly. Add potatoes and peas and heat through. You can serve it in a dish or straight from the pot.

Mom made this right after I came home from the Hospital with Corbin. Everyone raved about it! I lost her recipe but found this one it's just like it. You can also use 1/2-1 c. canned milk as part of the milk too. A yummy variation is to add cooked crumbled bacon to the top.
