1 pound red snapper fillets, cut into small chunks
3 tablespoons butter
1 medium onion, chopped
1 small green pepper, chopped
2 stalks celery, chopped
1/2 pound mushrooms, sliced
1/2 teaspoon dried tarragon
1 bay leaf
1 16-ounce can tomatoes, chopped
1 cup chicken broth
1/2 cup dry white wine
1 tablespoon lemon juice
1/2 teaspoon salt

Directions:
Directions:
Heat butter in large saucepan and add onion, green pepper, and celery. Saute for 5 minutes, add mushrooms, tarragon, bay leaf, tomatoes, chicken broth, dry white wine, lemon juice, and salt. Bring to a boil, reduce heat, and add the snapper. Cover and simmer for 15 to 20 minutes. Check seasoning. Serve with hot fluffy rice.
