1 c brown sugar
1 c sugar
1 c butter
2 eggs
1 c salted peanuts chopped
1 t baking powder
1 t baking soda
2 c flour
1 t vanilla
1 c crushed cornflakes
1 c oatmeal

Directions:
Directions:
Cream sugar and butter. Add eggs then rest of ingredients in order. Roll into walnut size balls or drop from teaspoon. Bake at 375º for 8 minutes on metal or 9 minutes on airbake or 12 minutes on baking stone. Let cool in pan for 5 minutes then remove to cooling rack. Optional: Garnish with half a peanut while cooling.

Bill's Grandmother used to make batches of these and freeze them for company when they came over. He remembers going out to Western Kansas to help with the wheat harvest and eating these cookies for dessert in the wheat fields. This is a favorite for us around Christmas.
