2 thick pork loin chops
1 T. olive oil
1 5-oz. pkg. Vigo Yellow Rice Mix
1 1/4 c. chicken broth
1 red onion, thinly sliced

Directions:
Directions:
Select thick chops, do not trim fat. Heat oil in skillet, sear chops until brown on both sides. Spray a 9" x 9" x 2" square baking dish. Place rice mix on bottom of dish, then pour broth over rice. Place chops on top of rice, cover with foil and bake in preheated 375º oven for 45 minutes. Saute onions in the same skillet with pork chop drippings. When chops and rice are done, place sautéed onions on top of chops and serve.
