4 boneless, skinless chicken breasts
1/4 tsp. salt
1/4 tsp. black pepper
1 T. olive oil
1 c. chicken broth
1 T. brown sugar
3 T. lime juice, divided
3 tsp. Dijon mustard
2 T. water
1 tsp. cornstarch
1 T. butter

Directions:
Directions:
Pound chicken breasts with flat side of mallet head until breasts are about one-quarter inch thick. Sprinkle with salt and pepper. Cook chicken in oil until browned, remove from skillet. Combine broth, sugar, two tablespoons lime juice and mustard. Mix well, then add to skillet. Saute over medium-low heat, stirring constantly about three minutes. In a separate bowl, whisk water and cornstarch. Add to skillet, turn up heat to medium-high and boil one minute. Stir in remaining juice and butter. Return chicken to skillet and simmer about three or four minutes.

To pound chicken, place the breasts inside a plastic freezer bag, then use a kitchen mallet or frying pan to beat the chicken. This saves a lot of cleanup time.
