1 lb. pork tenderloin
1/2 tsp. fresh ground pepper
1/4 tsp. salt
1 T. olive oil
1 T. garlic, minced
1/2 c. red cooking wine
1/2 tsp. dried rosemary, finely crushed
2 T. tomato paste
1 c. chicken broth
1/3 c. orange juice

Directions:
Directions:
Slice tenderloin into one-inch medallions. Use a rolling pin to flatten out medallions. Salt and pepper medallions and cook in oil until done. Remove medallions from pan and stir in garlic, wine and rosemary. Saute about one minute, stirring constantly. Add tomato paste, broth and orange juice. Cook down sauce until thickened. Add medallions back to pan just long enough to reheat.
