1/4 cup extra virgin olive oil
4 plump fresh garlic cloves (minced)
1/2 tsp red pepper (crushed) - (optional)
1 (28 oz) can tomatoes (crushed in puree)
sea salt
1 lb tubular pasta (penne)
2 Tbsp vodka
1/2 cup heavy cream
1/4 cup parsley (optional)

Make pasta as directed on box.

In an unheated skillet large enough to hold the pasta later on, combine the oil, garlic, red peppers and a pinch of salt, coating with oil. Cook over medium heat just until the garlic turns golden (2 to 3 minutes). Add tomatoes, stir and cook uncovered until sauce begins to thicken - 15 min.

Add the drained pasta to tomato sauce. Toss. Add the vodka. Toss again then add the cream and toss. Cover, reduce heat to low and let rest for the pasta absorbs the sauce. Add the parsley and toss again. Serve.
