French bread, cubed
1 cup cherry tomatoes, halved
3/4 cup sliced fresh spinach packed down
1/4 cup sliced fresh basil, packed down
diced onion
1 clove garlic minced (optional)
1 cup mozzarella and Parmesan cheeses (combined)
6 eggs
1 cup milk
1 tsp. Hungarian sweet paprika, optional
salt & pepper

Directions:
Directions:
Layer bread cubes on bottom of greased 13x9 casserole. Sauté onion, garlic, and tomatoes in olive oil until soft. Add spinach and basil. Add cheeses. Spread veggie and cheese mixture over bread cubes. Combine eggs, milk, paprika, salt & pepper. Pour over veggies and cheese. Bake at 375º for 25 minutes.
