1 pkg somen noodles (8 0z), 1 small head very fresh iceberg lettuce, shredded thinly, 3 chopped green onions, Chinese parsley (cilantro) optional but "awesome," 1 Japanese cucumber, slivered, 1 Jimacaba slivered, 3 eggs, beaten and fried, thinly sliced into 2-inch strips, 1/4 of char siu or deli chicken (shredded) Dressing: 1 to 2 tbsp toasted sesame seeds (do in non stick skillet being careful not to burn), 4 tbsp sugar, 6 tbsp vinegar (Apple Cider or rice), 4 tbsp shoyu, 1-1/2 tsp salt, 1/2 cup vegetable oil...Mix all thoroughly

Break somen noodles in half and cook according to package directions. Rinse w/cold water and drain; cool. Place somen noodles on bottom of pan. Layer in order the rest of the ingredients, refrigerate.

Note: When ready to serve place dressing "on the side." Each person can use desired amount and salad will not get soggy.

This is a wonderful "party dish" and can be found at almost any local gathering in the Hawaiian Islands. Garnish with or have on the side the cilantro .. adds a great Asian taste for those who like it.
