Filling:
3 lbs. ricotta
1 1/2 cups sugar
8 large eggs
4 tbsp. flour
rind of 1 orange

Crust:
3 cups flour
3/4 cup sugar
3/4 cup shortening
2 eggs
1/2 cup milk
1/4 tsp salt

Directions:
Directions:
Mix filling in a bowl. Beat until smooth. Mix crust and press in pie pan. Pour filling on crust. Bake at 350º for 1 hour. If center is soft, leave in oven for 15 more minutes.
