1/4 cup sugar
1/2 cup butter
1 egg yolk
1 cup flour
1 tsp. vanilla
pinch of salt (1/4 tsp.)
coconut / graham crumbs/chopped nuts

Directions:
Directions:
Combine sugar,butter and egg yolk. Beat well, work in flour vanilla and salt. On wax paper in 9" x 9" pan press dough in evenly, chill 1 hour. Divide into 5 strips. Cut each strip to make 15. Roll each piece into a ball and flatten. Dip each into unbeaten egg whites then into coconut/graham crumbs or chopped nuts. Place on slightly greased cookie sheet. Press finger into centre of each cookie . Bake 4 minutes at 400ºF. Place about 1/4 tsp jam in each cookie. Bake 10 minutes more.
