Ingredients: 1 pint whipping cream, 4 egg yolks, 1/2 cup granulated sugar,(put sugar in blender to make it "superfine" for best texture), 1 tbsp vanilla extract or the inside of one fresh vanilla bean (scraped from pod) and the "best" vanilla flavor. Sugar for Topping: Use Turbanado or raw sugar for a good "crunch."

Directions:Preheat oven to 350. Heat cream over low heat until bubbles form around edge of pan or microwave until "hot." Beat egg yolks and sugar together until thick, about 3 minutes. Gradually beat cooled cream into egg yolks. Stir in vanilla and pour into 6 (6 oz.) custard cups. Place custard cups in baking pan that has about 1/2 inch water in bottom. Bake until "set." (about 45 min.) Remove custard cups and chill. Sprinkle each custard w/about 2 tsp of coarse sugar..."broil" until bubbly..refrigerate again and serve chilled. |
