1 pint whipping cream, 4 egg yolks, 1/2 cup granulated sugar,(put sugar in blender to make it "superfine" for best texture), 1 tbsp vanilla extract or the inside of one fresh vanilla bean (scraped from pod) and the "best" vanilla flavor. Sugar for Topping: Use Turbanado or raw sugar for a good "crunch."

Preheat oven to 350. Heat cream over low heat until bubbles form around edge of pan or microwave until "hot." Beat egg yolks and sugar together until thick, about 3 minutes. Gradually beat cooled cream into egg yolks. Stir in vanilla and pour into 6 (6 oz.) custard cups. Place custard cups in baking pan that has about 1/2 inch water in bottom. Bake until "set." (about 45 min.) Remove custard cups and chill. Sprinkle each custard w/about 2 tsp of coarse sugar..."broil" until bubbly..refrigerate again and serve chilled.
