4 slices bacon
1 t. canola oil
1 stalk celery, chopped
1 leek, washed well and chopped
1 t. salt
1/2 t. pepper
4 c. reduced sodium chicken broth
4-5 Yukon potatoes
2 c. fresh corn kernels
3 tilapia fillets
1 t. thyme, fresh
1 c. fat-free half and half
2 t. lemon juice
2 T. chives, fresh

Directions:
Directions:
Chop bacon and cook until crispy. Remove bacon. Add oil and veggies. Cook until softened, about 2 minutes. Add broth, potatoes and corn. Cook 8 more minutes. Stir in tilapia and thyme. Cook 4 more minutes. Remove from heat and stir in half and half, lemon juice and bacon. Garnish with chives.
