Small to medium super thinly sliced iceberg lettuce, thinly sliced spring onions, Jimcama thinly sliced or julienne cucumber or halved green grapes..or just plain sliced lettuce. For Variation: Take fresh Wonton wrappers, cut them into thin strips and fry until crisp or bake in oven and top salads for extra garnish. For dressing: Basic: 2 tbsps rice wine vinegar, 5 tbsp vegetable oil, 1 tbsp soy sauce, 1/2 tsp sugar

For variations: Onion Flavor Japanese Salad Dressing: 3 tbsp rice wine vinegar, 4 tbsp vegetable oil, 1 tsp soy sauce, 1/2 tsp sugar, 1 tbsp grated onion. Seasame Flavor: 3 tbsp rice wine vinegar, 1 tbsp sesame oil, 1 tbsp soy sauce, 1 tsp sugar, 1/2 tbsp sake rice wine, 1 tsp toasted sesame seeds. Ginger Flavored: 2 tbsp rice wine vinegar, 3 tbsp vegetable oil, 1 tbsp sesame oil, 1 tbsp soy sauce, 1/2 tsp sugar, 1 tsp sake, 1 tsp grated ginger. Mix all ingredients other than the oil in a bowl...slowly incorporate oil...enjoy.
