Box of Manicotti or box of large shells
Large 16 oz small curd cottage cheese
1/2 cup fresh grated Parmesan
2 TBLS dried parsley flakes
2 beaten eggs
1 tsp salt
1/2 tsp pepper
2 1/2 cups of shredded Mozzarella cheese
1 jar marinara/spaghetti sauce of your choice

Cook pasta according to directions. While pasta is cooking stir together remaining ingredients except for the sauce (save out 1/2 cup of mozzarella to sprinkle on top). Using a cookie scooper fill the shells one at a time and place in a 9x13 pan until all filling and shells are gone (it will take some trail and error to figure out the portions to come out equal). Pour the sauce over the shells randomly (add sauce between each layer). Top with 1/2 cup of cheese. Bake covered @ 375 for 45 min. Let stand for 10 min.

We have found that the Stuff Shells are just as good as Manicotti Shells and much easier all around.
