3 eggs,
1 cup cooking oil,
2 cups sugar,
2 cups finely grated zucchini,
1 tsp. vanilla,
3 cups sifted flour,
1 tsp. salt,
1 tsp. cinnamon,
1 tsp. soda,
1 tsp. baking powder,
1 1/2 cups chopped nuts,
1 cup raisins.
Directions:

Beat eggs until light, add oil,sugar and vanilla. To this mixture add zucchini and dry ingredients that have been sifted together. Mix well. Pour into 2 greased loaf pans and wax paper on the bottom also greased. Bake at 350º for about 1 hour. Frost with Cream Cheese Frosting
