2 eggs
2 heaping tbsp mayo
1/4 cup sugar (optional)
1 3/4 cup self rising cornmeal mix (Martha White)
2/3 cup self rising flour
1 cup buttermilk
1/2 cup oil
1/2 cup water

Directions:
Directions:
Combine all ingredients and beat with electric mixer. Heat iron skillet with oil to cover bottom (this keeps cornbread mix from sticking). Place batter in skillet-batter should simmer around edges. Bake and enjoy!
