1 pkg Jiffy Corn Muffin mix
1 egg
2 tbsp shortening, melted
3/4 cup milk
1 onion, finely diced

Directions:
Preheat and melt the shortening in a large frying pan. Blend all other ingredients and drop by lightly rounded tablespoons in the hot grease about the size of silver dollars. Fry like pancakes until both sides are brown and crispy.
