3 c. sliced zucchini, salted, water to cover
6 T. butter
1/2 c. carrots
1/2 c. chopped celery
1/2 c. chopped onions
1/2 c. sliced water chestnuts
1 box of stuffing mix
1 can cream of chicken soup
1/2 c. milk

Directions:
Directions:
Cook zucchini in salted water until done. Melt 4 T. butter and saute carrots, onions, and celery until tender. Add water chestnuts and i 1/2 c. stuffing mix., reserving 1 c. for top. Add the soup and milk. Stir in drained zucchini and pour into greased 1 1/2 quart casserole. Melt the remaining 2 T. butter, add the remaining 1 c. stuffing and mix well and then sprinkle over the top. Bake at 350º for 30 to 40 minutes.
