1/4 c dry bread crumbs
1 large egg, slightly beaten
2 tbsp milk
2/3 c grated Parmesan cheese
1/4 c chopped Italian flat leaf parsley
salt and pepper to taste
2 lbs ground beef (or you can substitute 1 lb with ground turkey)
2 - 28 lb cans of crushed tomatoes
1 c beef stock
3 cloves of garlic, minced
5-6 basil leaves, shredded
1 sprig rosemary, leaves removed and minced
3 sprigs of oregano, leaves removed and roughly chopped.

Pre-heat oven to 350 º. Line a sided baking sheet with parchment paper.

In a large bowl, thoroughly mix first six ingredients. Add ground meat and thoroughly combine. Using a scoop or large soup spoon, make 1 1/2 to 2oz balls. Place on baking sheet just leaving enough space so the balls are not touching. Bake for 25 to 30 minutes or until meat balls are just cooked through. Remove from oven and allow to cool for 10 minutes. Reduce oven temperature to 250º.

Place meatballs in a large oven proof dish. Cover meatballs with garlic and herbs, add stock and cover with tomatoes. Cover with ovenproof lid or foil and return meatballs to oven. Bake for 60 minutes allowing sauce to develop. Uncover for last 10 minutes of cooking time.

Remove from oven and serve with pasta and Parmesan cheese.
