1/2 lb. orzo pasta
1/2 c. olive oil
1/2 c. oil-packed sun-dried tomatoes, minced
1/2 large red pepper, diced
1/2 large red onion, minced
salt & pepper to taste
1 pint cherry tomatoes, dice
2 small cucumbers, peel, dice
2/3 c. coarse chopped fresh dill
1/4 c. white wine vinegar
1 lb feta cheese, crumbled
2 garlic cloves, minced

Directions:
Directions:
Cook pasta al dente. Drain and place in large bowl. Add sun-dried tomatoes, onion, garlic, red pepper and stir well. When pasta is cool, add tomatoes, cucumber, dill, vinegar, feta, salt and pepper as needed. Stir gently. Chill.
