1 (8 oz.) pkg. manicotti, uncooked
1 (16 oz.) container ricotta cheese
1/2 c. grated Parmesan cheese
1 egg beaten
1 (61/2 oz.) can crabmeat, rinse & drained
5 T. chopped fresh parsley, divided
1 t. salt, divided
1/2 t. white pepper, divided
3 T. butter
1 clove garlic, minced
2 green onions, minced
3 T. flour
2 c. milk
1 t. lemon juice
1 (2 oz.) jar pimiento, finely chopped

Prepare manicotti according to pkg., drain. In a medium bowl, combine ricotta, 1/2 c. Parmesan cheese & egg; mix well. Stir in crabmeat, pimiento, 1 T. parsley, 1/2 t. salt & 1/4 t. pepper. Fill manicotti w/cheese mixture. Arrange in a 12 x 8 baking dish. In a large skillet melt butter; add garlic & green onions, saute until garlic is golden. Stir in flour & remaining salt & pepper. Blend in milk & lemon juice. Cook stirring constantly until mixture is thick & bubbly; remove from heat. Stir in remaining parsley; pour sauce over stuffed manicotti. Sprinkle w/additional
cheese. Cover; bake at 350º for 35 minutes.
