Crust:
1 1/2 cup Sweibach crackers, finely ground ( could use Graham Crackers instead),
1 tsp. cinnamon,
1/4 cup sugar,
1/2 cup butter, melted.
Filling:
1 pint whole milk,
3 egg yolks, beaten slightly,
2 T. cornstarch,
1 tsp. vanilla
1/2 cup sugar,
pinch of salt,
3 egg whites, beaten stiff.

Mix ingredients for crust well, reserve (1/4 cup of mix to top pie with) and line pie dish. Bake at 350º for 20 minutes. In double boiler place milk, egg yolks, cornstarch, sugar and salt. Cook over hot water until liquid coats the back of a spoon. Add some hot liquid to egg whites then fold all in and gently incorporate. Pour into pie shell, top with 1/4 cup of reserve crust mix and bake in 350º oven for about 30 minutes. Cool and refrigerate for at least 2 hours before serving. T
