1 lb. Italian sausage,
16 oz.can of tomato sauce,
16 oz. can of diced tomatoes,
8 oz. can of tomato paste,
2-3 cloves of garlic, minced,
1/2 medium onion, chopped,
1 1/2 cups basil, finely chopped,
1 T. Italian seasoning,
1 tsp. salt,
1 tsp. pepper,
1 1/2 cups Chianti red wine,

32 oz ricotta cheese,
1 egg,
16 oz. mozzarella cheese, shredded,
16 oz. Parmesan cheese, shredded,
1 package of lasagna noodles.

Cook sausage in large sauce pan, do not drain. In a separate sauce pan saute' onions and garlic in olive oil until tender and onions are translucent, combine with about a cup of finely chopped basil, Italian seasoning, salt and pepper into cooked sausage. Pour tomato sauce and diced tomatoes in with sausage mixture. In a mixing bowl, combine tomato paste and red wine, whisk until the consistency is like thick ketchup, mix into rest of ingredients and simmer on low heat for about an hour.
In another mixing bowl combine ricotta cheese , egg, 1/2 cup basil and 1/2 cup Parmesan cheese. Stir until well combined. Refrigerate until ready to use. In another bowl combine mozzarella and remaining Parmesan. Boil noodles for 8 or 9 minutes so that they are just barely done. Don't let them get too soft, as they will cook a little more in the oven. In 9x12 baking dish, build your lasagna in the following layers: 1. 3 rows of lasagna noodles. 2. Cover each noodle with about 3 T. ricotta mixture. 3. Then sauce. 4. Sprinkle a layer of cheese mixture. 5. Repeat until you get to the top. 6.Top layer is noodle, no ricotta, sauce, then cheese. Bake in 350º oven, uncovered for about 25 to 30 minutes.
