1 lb. cheese (Velveeta or similar cheese)
4 oz. pimento
1 c. real mayonnaise
1/2 c. grated pickles (sweet or dill, which ever you prefer).

Get the cheese cold in the fridge. Place a large piece of plastic wrap on your counter, then put some of the mayonnaise on the plastic wrap (so the cheese won't stick to the plastic wrap). Grate 1/2 cup of pickles and set aside. Next grate or shred the cold cheese. When you have grated about an inch of cheese (on the mayo that is smeared on the plastic wrap). add some of the pickles and drained pimento, repeat this process until well mixed. Mix in some of the pimento juice to make mixture easier to spread. Keeps well for quite a long time.
