Test cheesecake for doneness at the minimum baking time to avoid overbaking, which dries out the cake and causes the center to fall. Gently shake the pan rather than inserting a knife, which may start a crack in the cake. The center of the cheesecake should appear nearly set. A 1-inch portion in the center may jiggle slightly even when the cheesecake is done. (If the cheesecake contains sour cream, a slightly larger portion in the center will seem unset but will firm upon cooling.)
