10 Roma tomatoes (diced small)
5 garlic cloves (diced very small)
1/4 c. olive oil
1/2 c. white balsamic vinegar
1/4 tsp. salt
1/4 tsp. pepper
1/4 tsp. dried basil or 1/4 c. fresh basil
1/4 tsp. red wine vinegar

Directions:
Directions:
Combine all ingredients in a bowl. Can be served right away however setting overnight brings out all the flavors. Serve with toasted bread. Can also add a sprinkle of fresh Parmesan on top for added favor and color.

Start with half the red wine vinegar and then increase to taste.
