3/4 lb. ground beef
cumin and chili powder to taste
1 c. chopped onion
3 (or more) cloves of garlic chopped
1 green bell pepper chopped
1 red bell pepper chopped
1 8 oz can tomato sauce without salt
1 14 oz. can diced tomatoes without salt
1 10 oz. can corn drained
1 3.8 oz. can sliced black olives drained
1 15 oz. can black beans (optional ingredient)
1 tbsp. chili powder
3/4 c. grated cheddar cheese

Topping:
1 1/4 c. cornmeal
1/2 tsp. salt
3 1/3 c. cold water
1 tbsp. margarine or butter
Grated cheddar or jack cheese to taste

Directions:

Brown the ground beef and season it with salt, cumin, and chili powder to taste.

Saute the onions, garlic and bell peppers until they are soft. Season them with salt cumin and chili powder. Add them to the meat in a good sized pot. Add the remaining ingredients and heat until bubbly. Then pour into a 9 1/2 by 13 inch pan.

Heat the cornmeal, salt and cold water, stirring until it boils so that it doesn't stick. When it is thick and boiling, add margarine or butter and cheese.

Spoon cornmeal topping over meat mixture and bake in 350º oven for about an hour.
