3 c. Flour
2 c. sugar
3/4 c. Cocoa
3/4 c. Baking soda
1/2 tsp. Salt
2 C. water
1 c. Oil
1 tbsp. Vinegar
Filling:
8 oz. Cream Cheese
1/3 c. sugar
1/4 tsp. Salt
1 Egg
Maraschino Cherries
Directions:
Directions:
Mix first 8 ingredients in order and fill 2/3 full in mini muffin pans with paper liners.
Prepare filling: Beat all 4 ingredients together; place 1/4 tsp. onto each cup cake center; place 1/8 of a maraschino cherry on each.
Bake at 350º for 10 -12 minutes.

Although not a "Renaldi", Sonia was a wonderful mother, grandmother who was loved by all. This little dessert treat was a Pivovarnik family favorite!
