4 Large potatoes, 1/2 in. cubes,
1 medium onion, chopped,
1 cup beef gravy,
2 cups left over beef roast,
1 tsp. garlic and herb seasoning,
salt and pepper to taste

Directions:
Directions:
In electric skillet or frying pan with tight lid put potatoes, onion, gravy, meat and seasoning and enough hot water to nearly cover potato cubes. Stir and bring to boil, cover and continue to simmer until potatoes are barely tender. Remove lid and allow liquid to almost evaporated. Check seasoning and serve.

G.G. had Chuck Roast and gravy for Sunday dinner regularly. The left over beef and gravy were used to make this wonderful hash. The gravy made the dish. Serve with hot biscuits and you have a terrific, economical meal.
