1 large zucchini, sliced
1 or 2 yellow squash, sliced
2 firm yellow apples, peeled and chopped
2 tbsp chopped fresh parsley
4 tbsp butter
1 medium onion chopped
2 fresh (firm) tomatoes
salt and freshly ground pepper to taste

Directions:
Directions:
Set a small pan of water to boil. Drop the zucchini and yellow squash slices into the boiling water for 30 seconds. Remove immediately and drain.

Melt butter in frying pan and saute the onion until it is transparent. Add the apples and stir well to coat with the butter. Add the tomatoes and blanched zucchini and yellow squash. Stir well, then add the parsley.

Season this mixture and leave to cook, covered over gentle heat for 5-10 minutes, until zucchini and yellow squash are soft. Sprinkle with grated parmesan cheese. Serve hot.
