1/2 c. butter
1/2 c. sugar
1 egg
2 1/2 c. all-purpose flour
1 1/2 tsp. baking soda
1 tsp. cinnamon
1 tsp. ginger
1/2 tsp. salt
1/2 c. light molasses
1/2 c. honey
1 c. hot water
1 tbsp. orange zest

Whipped Cream Topping:
1 small carton heavy whipping cream
1/2 tsp. almond extract
powdered sugar to taste
1/2 tsp. nutmeg

Bread:
Preheat oven to 350º. Melt butter in a heavy pan & let cool. Add sugar & egg, beat well. Sift together flour, baking soda, cinnamon, ginger & salt. Combine molasses, honey, hot water & orange zest. Add the sifted & liquid ingredients alternately to the butter mixture until blended. Bake in a greased 9x9x2 in. pan about 1 hour, making sure to not over-bake.

Whipped Cream Topping:
Place small mixing bowl & cream in freezer for 30 minutes before beating cream (this allows cream to beat to a higher volume). Beat whipping cream as usual with electric mixer (or with wire whisk, if you're really enthusiastic). Add powdered sugar, almond extract & nutmeg just before cream is finished. Do not over-beat. Top warm gingerbread with whipped cream. Enjoy!
