2 lb. pork tenderloin
1/4 cup soy sauce
1/4 cup dry sherry
4 cloves garlic, chopped
4 tsp. grated fresh gingerroot
zucchini (4-6, depending on size)
2 tbsp. olive oil
1 large red pepper
4 medium scallions
1 tsp. salt
3 1/2 tsp. sugar
1 tsp. cornstarch

Trim excess fat from pork. Mix together soy sauce, sherry, gingerroot and garlic. Marinate pork in this mixture for about 40 minutes in the refrigerator, turning occasionally. Cut zucchini in chunks, scallions in 2-inch pieces, red pepper in thin 2-inch strips. Preheat broiler, reserve marinade. Broil pork 5-7 in. from heat, 12-15 minutes, turning once (meat should be slightly pink). Stir-fry vegetables in oil and salt until tender crisp. Heat marinade and sugar to boil. Add cornstarch, mixed with 1 cup cold water. Boil 1 minute. Place 1/2-inch slices of pork on platter with marinade on top. Arrange vegetables around pork.
