1 1/2 lb. fresh spinach
1/2 tsp. salt
6 green onions, chopped
1/4 c. olive oil
1 egg, slightly beaten
1/2 tsp. dill weed
1/4 tsp. pepper
1 c. Greek feta cheese, crumbled
1 lb. package fillo dough
1/2 c. olive oil

Directions:
To make filling: Wash spinach and chop in small pieces. Place in colander. Sprinkle salt and let stand for 5-10 minutes. Squeeze out excess water and place spinach in a bowl. Add rest of ingredients (except fillo and 1/2 c. oil) and mix together.

To make Spanakopita: Take 2 sheets of fillo and place on a cutting board. Brush entire fillo sheets with oil. Add another 2 pieces of fillo and brush with oil. Repeat 3 times in order to have 6 sheets of fillo. Spread some filling thinly over half of the dough. Roll up like a jelly roll and place cut-side down on baking sheet. Brush again with oil. Cut with knife into diagonal pieces about 1 inch apart cutting only about 1/8 inch through the dough.
Bake at 350º for 30-35 minutes. Cool and cut completely.
Note: Dough dries out quickly. Keep it covered with a sheet of wax paper and slightly dampened towel over the waxed paper.
