2 oz sun-dried tomatoes (not packed in oil)
1 large onion sliced
8 oz whole baby carrots
3 stalks celery, sliced
1 tsp dried thyme
1/4 tsp salt
1/8 tsp black pepper
4 boneless, skinless chicken breasts
1/4 cup chicken broth

Directions:
Directions:
Slice sun-dried tomatoes and place in bottom of slow cooker along with onions, carrots, celery and seasonings.

Place chicken breasts on top of vegetables and pour chicken broth over top.

Cover slow cooker and cook on low for four to six hours, or until chicken is no longer pink and carrots are tender.
