Meat must be at room temp. when starting.

Pre-heat oven to 375.

On a rack in shallow pan, place meat in oven for 1 hour exactly. Turn off the heat and DON'T OPEN THE DOOR!

When guests arrive, turn on oven to 375 again.
35 minutes for RARE
45 minutes for medium
50 minutes for well done

NOTE: There must be a minimum interval of 2 hours. More time is also OK.
